Falafel is a deep-fried balls or patties made from white chickpeas (kabuli chana). It is absolutely wonderful and awesome snack. This recipe is the easiest and reliable method to make Falafel.

Ingredients :

For the pita bread:

1 Cup   : Whole Wheat Flour (Gehun Ka Atta)
1 Tsp   : Crumbled Fresh Yeast
1 Tbsp  : Sugar
1 Tbsp  : Oil
1/2 Tsp : Salt

For the dressing:

6 Tbsp     :  Curd (Dahi)
2              :  Garlic Cloves, Chopped
1/4 Cup   :  Chopped Spring Onion Greens
A Pinch   :  Of Sugar
Salt         :   To Taste

Other ingredients :

>> OilFor Deep-Frying

>> 1/2 CupThinly Sliced Tomatoes


>> 1 CupShredded Lettuce

 Directions :


For the pita bread :


Step1     : Add all the ingredients except the oil in a bowl and using enough water, knead into a soft dough until it is smooth and elastic (approx. 5 to 7 minutes).

Step2     : Add the oil and knead again.

Step3    :  Cover the dough with a wet muslin cloth and allow it to prove till it doubles in volume (approx. 15 to 20 minutes).

Step4    : Press the dough lightly to remove air and divide into six equal parts.

Step5     : Roll out each portion into a circle of 150 mm. (6") in diameter and 4 mm. (1/6") thickness.

Step6    : Cook the bread on a hot tava (griddle) on each side for a minute or until the bread puffs up.

Step7    :  Remove and keep it aside.

Step8   : Cut each pita bread into 2 halves and keep it aside.


For the dressing :

Step1  :  Blend curd, garlic cloves, spring onion greens, sugar, salt in a mixer to get a smooth sauce and keep it refrigerated.

For the patties:

Step1  :  Combine the kabuli chana, green chilies, and mint and blend in the mixer into a coarse paste without using water.

Step2  :  Add carrot, capsicum, cumin seeds and garlic and mix well.

Step3  : Divide the mixture into 12 equal parts and shape them into patties.

Step4  : Deep-fry the patties in hot oil till golden brown in color.

Step5  : Drain on absorbent paper and keep it aside.


How to proceed:

Step1  :  Warm the pita bread halves on a hot (tava) griddle.

Step2  : Fill each pita bread half with some tomato slices and shredded lettuce, one patty and a spoonful of the dressing on top.

Step3  : Serve the Falafel.

Fish Fry Green Masala

Ingredients :


2 Tbsp    : Oil For Shallow Frying

6            : Fresh Fish Fillets ( Any Fish Can Be Used)

125Gm   : Ginger
1           : Garlic Bulb
3           : Green Chillies
1 Small   : Onion Or One Shallot
1 Cup     : Chopped Coriander Leaves
7 To 8    : Mint Leaves
Salt       : As Per Taste
2 Tbsp   : Slightly Roasted Semolina
2 Tbsp   : Wheat Flour
1           : Lime And Few Chopped Onion Rings For Garnishing

Directions :
Step1 :  Combine coriander leaves, onion, ginger, garlic, mint leaves, onion, chillies and salt in a processor.



Step2  :  Grind until a smooth paste.

Step3  :  Wash the fish now apply the green masala over both the sides of fish.

Step4  :  Freeze for 15 min.

Step5  :  Mix roasted semolina + flour into a bowl.

Step6  :  Place oil in a frying pan on high flame.

Step7  :  Once the oil is hot, reduce the heat to medium flame.

Step8  :  Sprinkle them over one side of fish.

Step9  :  Flip the semolina flour coated fish over oil.

Step10 :  Sprinkle the mixture over the rest of fish on both sides.

Step11 :  Shallow fry from both sides until crisp and golden brown in color.

Step12 :  Garnish with lime wedges and onion rings.

Step13 :  Serve the fried fish hot.

1 Tsp  : Butter To Grill
1 Tsp  : Mixed Herbs (Thyme, Rosemary, Marjoram, Basil, Oregano, Sage)
4        : Bread Slices
2 Tsp : Green Chutney
2 Tsp : Tomato Sauce

1 Tsp : Salt


Directions :

Step1 : First, in a bowl mash boiled potatoes.

Step2 : Add in chopped onions.

Step3 :  Add chilies powder, chaat masala, mixed herbs and salt.

Step4 : Mix and mash the potatoes well.

Step5 : Take bread slices and spread green chutney and tomato sauce.

Step6 : Spread generously.

Step7 : Cover other bread slice and press gently.

Step8 : Grill or toast on tawa adding some butter.

Step9 : Spread butter on both the outer sides of bread to make sandwich more crispy and golden.

Step10: Now grill till the cheese melts and bread turn golden brown.

Step11: Cut the bread into half and serve.


Step12: Serve hot with tomato sauce.

  • 1 Tbsp    :   Butter
  • 1 Tbsp    :   Plain Flour (Maida)
  • 1/4 Cup  :   Grated Processed Cheese
  • 1/2 Cup  :   Milk
  • Salt        :   To Taste

Directions :

Step1 :  Put the butter in a microwave safe bowl and microwave on high power for 10 seconds.

Step2 :  Add the plain flour, mix well and microwave on high power for 20 seconds, stir once in between after 10 seconds.

Step3 :  Add the milk and cheese, mix well and microwave on high for 1 minute, stir once in between.

Step4 :  Add the salt and pepper and mix well using a whisk.

Step5 :  Use as required.

  • 1/2Cup :  Plain Flour (Maida)
  • 4 Tbsp  :  Cocoa Powder
  • 2 Tbsp  :  Sour Curd (Khatta Dahi)
  • 1/4Tsp  :  Soda-Bi-Carob
  • 1/4Cup  :  Melted Butter
  • 5 Tbsp  :  Powdered Sugar
  • 1/2Tsp  :  Vanilla Essence
  • 1/4Cup  : Roughly Chopped Walnuts (Akhrot)
  • 1Tbsp   :  Butter For Greasing


Directions :

Step1 :  Sift together the flour and cocoa powder using a sieve and keep it aside.

Step2  : Combine the curds and soda-bi-carob in a bowl.

Step3  : Mix well and keep it aside.

Step4  : Combine the melted butter, powdered sugar, 
             vanilla essence and ½ cup of hot water in a bowl and whisk well.

Step5    : Add the curd-soda mixture to butter- powdered 
        sugar-vanilla essence mixture and mix well.

Step6   : Add the flour mixture and walnuts and mix gently to     make a smooth batter of dropping consistency.

Step7  :  Grease a 150 mm. (6”) diameter shallow microwave safe dish using butter.

Step8   : Line it with a piece of grease-proof paper at the bottom of the dish and again grease it using a little butter.

Step9   : Pour the batter into the greased and lined microwave safedish, spread it evenly using a spoon and microwave on high power for 4 minutes.

Step10  : Cool slightly and un-mould by turning upside down on a plate.

Step11  : Remove and discard the grease proof paper.


Step12  : Serve hot Brownies
